If you look in the Mame games list and look for a control of "dial" you see all of them. If you do not have a steering wheel, a spinner can be used to drive. Rotate or die! Ones which are not playable are generally rotary stick games or games with unique controllers.

There is a game setting to use either a spinner or a joystick. I suck at most everything that requires a spinner, but I can play the rotary joystick games pretty well by using a mouse to aim and fire.
